In your two examples, the easiest way to tell is first look at the year "1922". You will see that they are different on the two stamps.
The 1P stamp can only be Scott #2.
With the other stamp, the overprint will vary in size depending on the printer that overprinted the stamps. Scott states the size for each overprint. You'll just have to measure it.
The 2d stamp in SG has the following information:-
The Harrison overprint measures 15 x 17 mm (maximum) against the 14 1/2 x 16 mm of the Thom & Co printing which is a much bolder black than the latter, while the individual letters are taller, the i of Rialtas being especially outstanding.
There are differences in 2 Thom printings as well and there are two different dies of the actual 2 d stamp itself which may not be mentioned in Scott but I don't have a Scott to refer to to check. Hope this helps and doesn't further confuse

Scott does list the dies. You have to go to the Great Britain listing to get the information on the differences with those.
Could someone please tell me how you tell the difference between the various overprints ?Scott's gives sizes but gives no indication were you actually measure from.I have these two I can see they are not the same and there is a big variation in cat value.
